Naturally Flavored Tequilas: A New Layer of Agave Expression

One of the most exciting recent developments is a natural, post-distillation flavor-enhancement technique: resting finished tequila with chunks of cooked agave—often from a different agave variety than the one used in distillation.

This artisanal approach adds depth and complexity without artificial ingredients, creating a transparent and authentic expression of agave’s incredible diversity.

How It Works

The process begins with fully distilled tequila, typically made from 100% Blue Weber agave using traditional methods. After distillation, the tequila is brought into contact with roasted or steamed chunks of agave piñas, cooked using artisanal techniques such as stone ovens or autoclaves.

During the resting period, the spirit gently absorbs flavors, aromas, and natural color from the agave fibers. Sugars, organic acids, and essential oils infuse into the tequila, enriching its profile with richer layers of taste.

Once the infusion is complete, the tequila is carefully filtered to remove solids and ensure clarity. By then, it has already taken on a warm, golden hue—reminiscent of Reposado or Añejo—despite never touching a barrel.

Varietal Character from Other Agaves

A fascinating element of this method is the ability to work with agave species beyond Blue Weber. While tequila regulations require Blue Weber for distillation, the post-distillation resting process allows producers to introduce flavors from other agaves such as:

  • Espadín (Agave angustifolia) – herbal, earthy notes.
  • Cupreata – bright, citrusy, with a touch of spice.
  • Salmiana – vegetal and subtly saline.

Each brings its own personality, giving drinkers a new way to experience Mexico’s agave biodiversity—within the framework of tequila.

Curado Tequila: A Leading Example

Curado Tequila stands out as a pioneer of this approach. Starting with premium Blue Weber tequila, Curado rests it with cooked agave from different regions and species, depending on the expression.

Each bottling highlights a single agave variety, much like single-origin coffee or cacao, allowing drinkers to explore the influence of each plant’s terroir and character.

Current Curado Expressions

Today, Curado offers three core “infusión de agave” expressions, all starting with unaged Blue Weber tequila and resting it with different cooked agaves:

  • Blue (Blue Weber Agave) – Infused with roasted Blue Weber agave, this expression delivers gentle sweetness, floral and vegetal notes, and a light golden hue. Smooth and approachable, it’s an easy entry point into the category.
  • Espadín (Agave angustifolia) – Using agave from Oaxaca, this version offers light amber tones, subtle smokiness, and fresh herbal aromas with a touch of citrus. Bright and slightly earthy, it’s a nod to mezcal’s flavor profile.
  • Cupreata (Cupreata Agave) – Sourced from Michoacán, Cupreata brings a rich golden color, vibrant spice, and savory undertones, with hints of cooked chili and white pepper. It’s the boldest and most complex of the lineup.

While all three are filtered after resting, they retain both the color and distinctive character of the infused agave—achieved without oak aging or additives.

Innovation Rooted in Tradition

This technique blends heritage with creativity, staying true to tequila’s regulations while pushing its flavor boundaries. It relies solely on agave, time, and craftsmanship to elevate the drinking experience. As more producers embrace the method, naturally flavored tequilas made through agave resting could emerge as a category in their own right—a celebration of pure agave artistry from plant to glass.
